Welcome to the "Caprese Sandwich." A sandwich filled with heirloom tomatoes, mozzarella cheese, fresh basil, a drizzle of aged balsamic vinegar and homemade pesto...


Yes my friends, this is heaven and you have arrived.


This is one of the most delicious, quick, and easy recipes you'll find here on my blog.


I hope you enjoy this recipe as much as I enjoyed making this and then having it for breakfast... (Sandwiches can be breakfast!)

.Caprese Sandwich.


Ingredients:


Produce:

  • 1 large heirloom tomato cut into round slices

  • 2 cups of basil

  • 1/2 a cup of parsley

  • 1 cup of spinach

  • 5 cloves of garlic

  • 1/2 cup of almonds (I prefer to use almonds in my pesto instead of pine nuts to lower the cost)


Baking and Spices:

  • Salt

  • Black pepper

  • Olive oil

  • Balsamic vinegar


Dairy and Other Ingredients:

  • Mozzarella pearls

  • 1/2 cup of shaved or grated parmesan cheese

  • 1-2 loaves of fresh baked bread- (I recommend ciabatta rolls. I used a garlic, parmesan, herb bread)


To begin pre-heat your oven to 350.


On a large cutting board take1-2 loaves of bread and slice them evenly in half and set aside.


In a food processor or blender add 1 cup of basil, 1 cup of spinach, 5 cloves of garlic,1/2 cup of parsley, 1/2 cup of almonds, and 1/2 cup of parmesan cheese. Pulse or blend together while pouring in about 1-3 tablespoons of olive oil. Add a teaspoon of salt. Scrape the sides down to combine all of the ingredients and continue to blend. Add more olive oil to loosen the pesto.


When you have finished blending the pesto, spread a thick layer on each half of the bread:


Next, add the the sliced tomato and a pinch of salt:


Add a few small basil leaves and mozzarella pearls and a drizzle of balsamic vinegar:


Close the sandwich to melt the cheese onto both sides of the bread, or keep them open faced. Place onto a large baking sheet and when your oven is ready at 350 put the baking sheet in and cook the sandwiches for 7-10 minutes or until cheese is melted.

*Every oven is different, so keep an eye on the sandwiches to avoid burning the bread.


When the cheese has melted to your desired amount remove the sandwiches from the oven, drizzle with a more balsamic vinegar, basil, and add black pepper on top:

These sandwiches are perfect to share or keep all for yourself!

Just cut them into squares, pass them out and have fun and enjoy!
