.Stop Light Skewers.

Parties, get togethers, family gatherings... We all host them, attend them and need to "bring a dish to share"... And, what is one of the most stressful parts of a party? Planning interesting and cost effective hors d'oeuvres. Here is my take on a savory and sweet small bite that is sure to be a crowd pleaser without hurting your wallet.


I present, "The Stop Light Skewer".

Stop Light Skewers


Ingredients:


Produce:

  • 2 bell peppers (preferably 1 green and 1 red)

  • 1 large mango or two cups of pre-sliced mangos


Baking and Spices:

  • 1 teaspoon of honey

  • Chili lime salt/seasoning (Recommendation: Trader Joe's brand)


Other ingredients:


  • 1 jar of red curry paste

  • 1-2 packages of extra firm tofu

  • 2 tablespoons of soy sauce

  • Skewers (pictured are bamboo martini skewers)


To begin wrap tofu in paper towels and place under a heavy plate or two. Press as much moisture out of the tofu as possible. (10-15 min).


In a large oven safe baking dish mix together 3-4 tablespoons of red curry paste, one teaspoon of honey and 2 tablespoons of soy sauce.


Cut tofu into 1 1/2 inch cubes and place into the bowl of curry, soy sauce and honey. Roll the cubes around in the sauce, being mindful to cover all sides. Let tofu marinate in the fridge for 30min-1hr.


While tofu is marinating pre heat your oven to 350. Cut the peppers and mango into 1 1/2 inch squares or cubes. Roast the bell peppers for 12 minutes on a large sheet pan. Add mangos to the sheet pan and continue to roast for another 5-10 minutes, or until peppers are tender and slightly blackened on the edges.


Once the peppers and mango have finished roasting remove from the oven and set aside. Raise the temperature to 375 and place the marinated tofu into the oven to bake for 15-20 minutes. Flip the tofu squares over half way through the cooking time.


While the tofu is baking sprinkle the mango with the chili lime salt. The seasoning should have a subtle kick to it, so taste a piece to decide how much or how little should be used.


When the tofu has finished baking remove from the oven and let cool. This dish can be served room temp or warm.

*If you are worried about drying out your tofu in the oven, or even burning it, I recommend searing it on the stove top in a hot pan for a few minutes on each side.


To assemble place the tofu square on the bottom. This will serve as a base for the ingredients to stand on. Next layer the green pepper, the yellow mango and finish with the red pepper. Place a decorative skewer through the ingredients to hold all the components together and enjoy!

*I recommend a martini length skewer.
